Organic Strawberries!!! On this day, we made all fruit smoothies with strawberries, blueberries, raspberries, almond milk, and bananas. MMMMM...

One cup of strawberries contains over 13% of the RDA of dietary fiber, yet only 43 calories. The dietary fiber in strawberries helps to keep digestion regular, as well as lowers blood pressure and curbs overeating.
The combination of antioxidant and anti-inflammatory agents found in strawberries is well-known to fight against the onset of many different forms of cancer. Thanks to the vitamin C, folate, and the flavonoids quercetin and kaempferol that they also contain, strawberries are a delicious defense against potentially cancerous cells.

On Tuesday, August 30, 2011 we will be having a special lunch with aromas from Ukraine! Our special guests Anna and Svetlana will be featuring Cabbage Rolls as our main dish. I can't wait to learn how to make them ... and ... have a taste!

Heavenly Waffles
Today, we had special guest Joe come over and make the yummiest Oat Coconut Waffles that I have ever had.
Ingredients...Organic Rolled Oats, Shredded Coconut, Vanilla, Salt, and Water!!! That's right gluten and dairy free! The children loved them. We served them with Sunflower Seed Butter, Maple Syrup, Blackberries, and Bananas! YUM.

Today, we were helping ourselves to Soy Cheese Sandwiches on Daves Good Seed Bread, Slightly Steamed Peas, Mixed Oregon Berries, and strips from a young Coconut. Delicious!
Yellow Squash!!!!

The most simple recipe for yellow squash is to slice them, sprinkle with a pinch of salt and olive oil and a little water. Then put the dish in the oven to gently steam.
So delicious!

Our garden...

We have already been planting (organic, non GMO) seeds in our garden. Here are some of the foods that have begun to come up:
Broccoli
Lettuce
Pumpkins
Corn
Tomatoes
Peas
and Cucumbers.
The children helped to plant them. We look forward to caring for them as they grow and hopefully harvesting them!
